The situation: Truma
were expanding and moving to a green-field site. The Directors had decided to provide
a dining facility for their employees but had no previous experience
of designing or running a restaurant. The facility would
be used as both a staff dining room and also as a place for
customers to use whilst visiting the site.
The Olive solution: Truma partnered with Olive whilst the
building was still in the planning phase. The
client delegated the design and build of the restaurant, the
recruitment of Team Members and the running of the facility
to Olive leaving the client to co-ordinate the remainder of
a substantial £7million build project.
As long opening times were required, the service was geared
towards 'all day grazing' as opposed to periods of busy rushes. In
addition, by planning for a degree of customer self help with
minimum staffing levels, a kitchen with a large view through
to the servery area was installed resulting in a facility
with the 'feel' of a high street deli. The service includes
fresh quality coffee and a sandwich offering which are further
supported by hot light meals.

The client's perception:
'The whole experience of planning, designing and executing
the move of our business to new premises was incredibly time
consuming. We had an idea of what we wanted from a
staff canteen but not how to go about it.
Olive listened to our requirements and came back to us
with a design solution which has enabled us to offer a superb
quality facility for our employees and also a comfortable
environment in which our customers can relax.
Within the first couple of meetings with Olive, I had
complete confidence that they would manage a part of the
new build in which we had no experience. I always
felt that Olive was working both for and with me in developing
a facility and service that is bespoke for Truma.
The finished facility is the show piece of our building
and really does deliver the service that we required'
